Back in December I made some turkey soup stock and froze it for future use.


The stock was frozen in 2-cup portions, so I pulled a couple of them out of the freezer and made myself some soup. I brought the stock to a boil and added what I had on hand: carrots, sweet potatoes, chickpeas, corn, peas, leftover rice, and some spices. It turned out to be a very hearty and yummy soup. The best part was it made enough for three lunches.


What do you like to do with vegetable/chicken/turkey stock? We were thinking of making it the base of our next stew. What do you think?

  1. You know I love stock of all kinds, and this end product looks delicious.

    Today I'm using frozen chicken stock in the big cast iron skillet. Seasoned veg down first, topped with thighs and legs and right before we go in the oven, a container of homemade chicken stock. If I was out of stock, I'd use water.

    From there, I'll make a killer gravy to coat the veg (and chicken), and we'll dip homemade spelt flatbread into it all. So flippin' good.

    1. That does sound good. That would be some excellent gravy. Will have to try that. We have 6 cups of stock left so I'm looking forward to using it up.

    2. I changed things up and went with part wholemeal, part wheat rolls.

      I turned the leftovers into a stew/gravy. We actually had that for breakfast today, instead of the bacon. But after I read a few posts, I'm headed to the store for bacon. Having it for lunch.

      Did you ever have organic spinach, hard boiled eggs, ranch and bacon?

  2. That soup looks good! We regularly use veggie stock to make stew, and it always turns out well.
